This is a damn fine drink, simple, fresh, and utterly delightful, which is something that people tend to forget when they
think of Bellinis. The key is the ingredients.
A true Bellini consists of only two ingredients, white peach purée and Prosecco, a dry, white, Italian sparkling wine. You
can make white peach purée by peeling and squeezing fresh, ripe white peaches, and by gently pressing some of the flesh
– don’t use a blender, as it aerates the purée too much. Add a dash of sugar syrup if the peaches are a bit sour, but you
shouldn’t have to. If you have to use something other than Prosecco, make sure it’s dry and light.
