Ah the poor, maligned Pina Colada – the cocktail that serious bartenders sneer at or even refuse to make, and customers
barely dare to order for fear of being ridiculed. When made very simply, it is a true Caribbean classic (and indeed a close
relative of the Batidas of Brazil).
2 oz / 6 cl white rum
1½ oz / 4½ cl cream of coconut
4 oz / 12 cl freshly pressed
• Blend ingredients with crushed
ice until smooth.
• Pour into glass and garnish
with a pineapple wedge and
a cocktail cherry
