Three-pea salad with mint lemon dressing: This three-pea salad is very refreshing and therefore perfect for on a hot
Sugar-snap peas 150 g (5 oz)
Snow peas 150 g (5 oz)
Green peas 125 g (41/2 oz)
Bacon 4 slices, chopped
Onion 1, peeled and chopped
Raw peanuts 60 g (2 oz)
Parmesan cheese (optional)
Olive oil 2 Tbsp
Lemon juice 60 ml (2 fl oz / 1 /4 cup)
Garlic 1 clove, peeled and minced
Dijon mustard 1 tsp Chopped fresh
mint leaves 100 g (31/2 oz)
Salt to taste Ground black
pepper to taste
Bring a large pot of salted water to the boil. Add sugar-snap peas, snow peas and green peas and blanch for 2 minutes.
Drain in a colander and run under cold water. Transfer to a salad bowl and set aside.
Prepare salad dressing. Whisk together olive oil, lemon juice, garlic, Dijon mustard and mint in a small mixing bowl. Whisk
until smooth. Season to taste with salt and pepper then set aside.
In a non-stick frying pan, sauté bacon for 2–3 minutes or until crisp. Add onion and peanuts. Sauté for another 3 minutes or
until onion is golden brown then transfer to the salad bowl.
Pour salad dressing over ingredients in salad bowl. Toss and mix well. Transfer to a serving plate, sprinkle with Parmesan
cheese, if desired, and serve.
